This is a graduate-level course on the importance of balance. Heat from the chile and a good pop of acid keep the intense richness of the pine nuts from overpowering the dressing. The addition of fish sauce heightens the umami. I love this dressing in the Sweet Corn Salad, but it can also bring simple snacks, such as a chicken salad sandwich or herb-marinated tomatoes, to life.
