I’m not about to pick a fight with maple syrup, but of all the delicious things that can be extracted from a tree, palm sugar is definitely up there. It plays really well with herbs, chiles, and fresh, juicy vegetables. If you dressed some shredded cabbage, cilantro, and jalapeños with this vinaigrette and spooned it over a piece of fried fish, you’d be in a pretty good spot.
