This is a very silky and vibrant sauce made from apples that I like to have on hand in the wintertime. Contrary to the title, the sauce contains no dairy—“butter” is more of a nod to its smooth and rich consistency, à la “peanut butter.” I prefer Honeycrisp apples for this, but I’ve also had good success with the Fuji and Gala varieties.
Use this apple butter where you would normally use applesauce. It’s also great with salty and harder cheeses, such as clothbound Cheddars, as well
