Casseroled Grouse with Marmalade

For this recipe you need a dark rich marmalade. If you are making your own, make sure you include black treacle or molasses or brown sugar. This is another method for using old grouse. I was aiming for a grouse and kumquat recipe, but it tasted of very little so I threw in the marmalade. Nowadays I omit the kumquats.

Ingredients

  • 4 onions
  • 2 old grouse
  • 6 ounces smoked bacon, cut into cubes

Method

Preheat the oven to 350°F.

Chop the onions into quarters and put them into a heavy flameproof casserole dish, or other heavy pan for which there is a lid. Cut the grouse in half and add to the pan. Put in the bacon and thyme, and season with salt and pepper. Pour in the beer, b
