Caramel is Vietnam’s signature flavour. It sounds unusual but once you add the fish sauce and lime, it transforms into something magical! Traditionally this dish would be cooked in a small clay pot, but you can use a heavy saucepan with a lid.
In a small bowl, mix all the garlic, ginger and chilli together.
Heat the oil in a medium saucepan, add the garlic mixture and cook over a medium heat until softened.
Mix the jaggery with a tablespoon of water, then add it to the saucepan. Heat for about 2-3 minutes until the sugar is melted, bubbling and slightly sticky.
