Caramel is Vietnam’s signature flavour. It sounds unusual but once you add the fish sauce and lime, it transforms into something magical! Traditionally this dish would be cooked in a small clay pot, but you can use a heavy saucepan with a lid.

Ingredients

  • 3 garlic cloves, finely sliced
  • 3 tsp finely chopped garlic
  • 2 tsp fi

Method

  1. In a small bowl, mix all the garlic, ginger and chilli together.

  2. Heat the oil in a medium saucepan, add the garlic mixture and cook over a medium heat until softened.

  3. Mix the jaggery with a tablespoon of water, then add it to the saucepan. Heat for about 2-3 minutes until the sugar is melted, bubbling and slightly sticky.
