The traditional atayif stuffings are either some type of sweet cheese or crushed, spiced nuts. Laila’s grandfather, rest his soul, preferred a milk pudding stuffing (Mhalabiya).

Ingredients

  • cups (170 grams) shredded low-salt or desalted white cheese, such as akkawi or queso blanco
  • ½

Method

Strain the soaked cheese and pat it dry with a kitchen towel before using it. If you are using akkawi, de-salt it by soaking the shredded cheese in cold water and rinsing it several times. Crumble with a fork or your hand, then add remaining ingredients and mix well. Stuff as indicated below.
