As you’ve probably gathered, we’re huge fans of ham hock, so shredded slow-braised ham hock would naturally be our choice for this salad. Failing that, you can buy a chunk of ham and shred it yourself. When we fancy a change, we have been known to make this salad using tuna in olive oil, which is incredibly delicious as well.
Put the butter beans into a bowl and add the gherkins or cornichons, onion, parsley and dressing. Toss well.
Divide the salad between 4 plates, top with the ham and tomatoes. Serve with a good twist of black pepper.
