This salad is a perennial favourite during the summer months, when we feel all the crunchy green vegetables are doing us so much good. It is a great salad to take on picnics, but don’t refrigerate it or the oil will solidify and cling to the feta, and the veggies will lose their flavour. Sugarsnap peas, served raw when in season, are sweet and crunchy, but if those you find are not at their best, you might want to blanch them quickly first.
