This mayo is amazing with most dishes. It goes pretty much with any fish, such as smoked salmon; it’s good with salty ham or sliced chorizo; and it’s wonderful with bacon in a chicken bap.
Rinse and finely chop the capers and cornichons or pickles. Place in a bowl with the mayo, English mustard powder, lemon juice and seasoning. Mix well, then taste and adjust the seasoning as necessary.
