This is a morning coffee cake, made with a thick batter, two layers of berries, and a generous topping of streusel. As the cake bakes, the batter pushes up through the streusel, causing the cake to buckle—hence the “buckle” in its name. Although this recipe calls for blueberries, it’s also delicious with more-difficult-to-find huckleberries—hence the “huckle” in the name. If you are using huckleberries, toss them in a little sugar first, as they’re considerably more tart than blueber
