As proper Mexican food becomes increasingly popular in this country, black beans are now quite easy to find. Simply stewed in this way, the beans can be eaten alongside tender pork or barbecued fish, included in the famous breakfast Huevos Rancheros, or smeared in tacos. I often have a big batch of cooked beans in the fridge to be reheated as an easy office lunch or poured into a thermos and taken winter fishing.
