New York grocers continue to sell limes as if they were exotic curiosities. Why, I don’t know, because they grow as plentifully in Florida as lemons and travel just as well. This vivid green citrus is useful for many more things than decorating a gin and tonic. In Mexico, the Caribbean, and Florida it is used as a marinating agent for fish and shellfish and otherwise interchangeably with lemons. Even though the price is weirdly inflated, this pie requires only 2 large juicy limes.
