Ingredients

  • Ripe tomatoes 4 lb.
  • onions 3 large ones
  • Demerara sugar

Method

  1. Cut the tomatoes into slices.
  2. Put them in a saucepan.
  3. Slice the onions, and add them.
  4. Add sugar, salt and pickling spice (tied in a muslin bag).
  5. Then cayenne pepper.
  6. Pour the vinegar over them.
  7. Boil all together gently for 1½ hours.
  8. Stir to prevent burning.
