  • A turkey
  • some good forcemeat
  • a tongue
  • white sauce
  • turnips

Method

  1. Truss the turkey with the feet inside.
  2. Take out the breast bone, have ready a well-boiled calf’s tongue.
  3. Put it and some delicate well-made forcemeat inside the turkey in place of the breastbone.
  4. Re-form the breast and truss the turkey correctly.
  5. Boil up and simmer for 2 hours.
  6. Pour over the bird some goo
