  • ½ basic crêpes mixture
  • apricot jam
  • 2 tablespoons cognac
  • chopped almonds

Method

Make about 12 crêpes, transferring them to a warm plate as you cook them. Combine apricot jam, cognac and 1 ounce finely-chopped almonds; spread crêpes with apricot-nut mixture; roll them up neatly, place on an oven-proof serving dish and keep hot in a very slow oven (250°F. Mark ¼)
