Whenever I cook this dish, we can’t stop eating it. By meal’s end, our plates are scraped clean. Morsels of soft tofu mingle with bits of minced shrimp and pork or chicken in a mellow rice wine sauce. This is a favorite dish of Peter Tseng, the chef at Tangra Asian Fusion Cuisine. He adds fermented sweet wine rice, the wet sediment from making sweet rice wine, and dried red yeast rice to counter the sweetness with a slight astringency and earthiness. The yeast also speckles
