My earliest memories of helping my mother in the kitchen are of stirring risotto and helping to make this dessert. My mother still makes it, and we also make it at our house. At our cooking school in Italy, we end each course with it. We encourage our students to unleash their creativity in decorating it, and we have assembled an impressive collection of photos of their creations.
