This rich dish of gratinéed sea scallops is a traditional French first course that is usually served in real scallop shells. But you can serve your coquilles Saint-Jacques (French for “scallops”) in any small gratin dishes.

Ingredients

  • ½ cup (25 g) fresh bread crumbs
  • 2 tablespoons freshly grated Parmesan cheese

Method

In a small bowl, combine the bread crumbs, Parmesan, 1 tablespoon of the melted butter, and the chives. Mix well and set aside.
