Ras el hanout is a fragrant spice blend—often including cinnamon, cardamom, nutmeg, anise, ginger, turmeric, and pepper—that is used in many Moroccan dishes. Here it adds spicy aroma to a sweet and tangy onion jam that is spread over silky cod fillets before baking. You can easily substitute monkfish, halibut, or rockfish fillets using this preparation. The recipe makes a bit more jam than you’ll need, so you can use it with other seafood dishes or with chicken or pork.
