  • 5 large Maris Piper potatoes

Place the whipping cream into a saucepan and bring to the boil; turn down the heat and simmer to reduce by half and thicken. Remove from the heat and set aside.

Peel the potatoes and cut into very fine even-sized dice – as small as you can. Place the diced potatoes into a pan of cold salted water, and over a medium heat bring to the boil and simmer until tender. Remove from the heat and
