You can buy these squid either frozen and cleaned or fresh (we explain how to clean them yourself below). We love these grilled and cut into rings as a side dish with a glass of white wine. Just one bite transports us straight to the Mediterranean.

Method

  • Make the aioli: Put the garlic in a food processor with the parsley, wine, lemon juice, and ginger syrup and blend until smooth. In a medium bowl, mix together the sour cream and mayonnaise. Spoon in the garlic-parsley mixture. Season with salt and pepper to taste. Cover and refrigerate until needed. The aioli will keep in the refrigerator for 3 to 5 days.
