French-fried Poached Eggs

Method

Heat about 1 inch oil in a small saucepan to very hot, or about 360 degrees. Break egg into small dish. When oil is hot, tip pan to one side, making a well of oil. Slide 1 egg at a time into oil. It will foam and bubble. Spoon oil over the top of the egg and cook about 1 minute.

Lift out with pancake turner, drain, then blot on paper towels. Season with salt and pepper. Serve as you would poached eggs. These eggs are crisp on the outside and soft within. A joy to eat.
