Ingredients

  • 6 medium beets with greens
  • Salt
  • 3 tablespoons extra virgin olive oil

Method

  1. Preheat the oven to 400°F.
  2. Rinse the beets under cold water, then cut the greens from the beets and set aside. Put the wet root bulbs on a sheet of heavy-duty aluminum foil and seal them in a pouch, allowing enough space inside for the steam to circulate.
