A simple Italian salad generally consists of one or more varieties of lettuce to which one or more of the following can be added: arugula, radicchio, grated carrots, sliced cucumber, sliced fennel, and tomatoes. I personally like to include red or yellow peppers and avocado as well. The salad course is normally served after the meat or fish course and is meant to refresh and cleanse the palate.
