A vegetable served in insalata means it is dressed with oil and vinegar like a basic salad and served usually at room temperature. Many people are convinced of the superiority of thin asparagus. I prefer the thicker, meatier stalks, especially when prepared simply as in this recipe. Trimming and peeling the asparagus makes the entire stalk tender and edible.
