This recipe calls for a basic falafel mixture: Ground chickpeas that have been soaked overnight in water, salt, a little cumin, and coriander. However, the center of the falafel ball holds the real surprise – onion mixed with sumac – that mellows out the onion’s sharpness and gives it a slightly tart flavor.
