This is kind of a semi-homemade salad for cheaters, but you need a few of those in your life! It’s got all the Korean flavors I absolutely love: pungent, tangy spice from the kimchi, warm and toasty sesame. Kimchi really can do no wrong and generously flavors the noodles. I use store-bought baked tofu because why not? But you can make your own if you choose. If you can’t find packaged cooked edamame, use frozen edamame, thawed to room temperature.
