  • 2 pounds (910 g) sweet potatoes, peeled and cut into 1-inch (2.5 cm) chunks

  1. Place the sweet potatoes in a 4-quart (3.8 L) pot and add enough water to submerge them by 2 inches (5 cm). Cover the pot and bring to a boil, then lower the heat and let simmer for
