Forty years ago, guacamole was almost as rare north of the Mexamerican borderlands as the avocado of which it is made. Today, mashed avocado seasoned with chili and spiked with lemon or lime is as common as crackers. Guacamole means literally “avocado sauce” (guaca from the Aztec ahuacatl for “testicle” and the similarly shaped fruit; and mole from Mexican-Spanish for “sauce” or “mixture,” as in “turkey mole”). The only way to go wrong with any avocado sauce or m
