Grilled meatballs are another good use for the flavoursome mature lamb around in February.

Ingredients

  • 1 lb leanish lamb – finely minced
  • 1 small onion – peeled and grated
  • 1 tablespoon

Method

Knead all ingredients together thoroughly with your hands. Shape into walnut-sized balls, roll them a bit so that they are more egg-shaped, then flatten them between your palms.

Grill over charcoal, on a pre-heated griddle, or under a grill preheated to its maximum setting. Turn once. At the end of cooking, the köfte should be well-browned on both sides.
