  • ¾ pt (480 mils) milk
  • 1 teaspoonful custard powder

Method

Peel the lime rind very thinly. Heat the milk and pour it hot over the rind, cover and infuse for 15 minutes. Strain. Add custard powder dissolved in milk and cook for 5 minutes. Remove from the fire; cool a little.

Beat the egg yolks with the sugar and pour this into the custard. Cook over hot water or on slow heat and stir constantly until the mixture thickens and coa
