Nian gao is usually served over the course of the 15 days of the Chinese (lunar) New Year celebrations when family and friends come to visit. To keep it fresh, wrap in plastic and refrigerate. When ready to serve, coat slices in egg and pan-fry. The result is a crisp outer shell and a soft chewy center.
