Here is a basic recipe for sofrito, which is the base and spirit of our Puerto Rican cuisine. Each cook will adjust the recipe to make it their own, but this maintains the essence of Puerto Rican flavour.

Ingredients

  • 1.3 kg yellow onions, peeled and chopped
  • 225 g Cubanelle pepper (seedless)

Method

Combine all the ingredients except the vinegar in a large container. Crush the ingredients in a food processor, then add the pineapple vinegar. This helps to preserve the sauce but be aware that it will also add a touch of acidity. Once you are happy with the flavour and consistency of your sofrito, store in an airtight container for a couple of weeks in the fridge or longer in the freezer.
