Pide are a sort of boat-shaped pizza, cooked in a wood-fired oven. Here they are made with cheese, English spinach or chicken, but you can also fill them with minced beef pieces of mutton, or sucuk (spicy cured sausage), with an egg on top of the meat and a tomato-parsley-capsicum mixture, as shown in the picture.
To make the dough, combine the yeast with the lukewarm water in a small bowl until it has completely dissolved. Sift the flour into a bowl, and add a big pinch of salt. Make well in the centre, and gradually mix in the yeast mixture, drawing in flour from the sides, until the dough comes together; knead on a lightly floured surface, to make a ball of smooth, elastic dough.
