In Turkey, street food is part of the cultural heritage. Unpretentious and, above all, very good quality, it inspires the greatest of chefs. From grilled meat or fish sandwiches to local pizzas, chestnuts, fresh juices, stuffed mussels or the little mountains of pilav rice with chickpeas sold on the city’s footpaths, you can find everything on the streets and you can stop to enjoy them at any time of day. There are times for eating particular dishes, especially at night – a lahmaçun devoured at 8pm does not rule out the 2am islak burger or the 5am kokoreç. And there are places dedicated to selling these things: a street that only sells kumpir (enormous potatoes stuffed with everything) in Ortaköy; the best döner in the city at Beşiktaş, which recreates its gargantuan meat spit each morning – by afternoon, it is all gone! They will start again tomorrow...
