This, along with the Kombu Dashi Stock, is a great vegetarian stock option. Dried shiitake provides such a powerful flavour and it has a nice sweetness. This is suitable for stronger-flavoured dishes like stews or noodle broths.
Pour the filtered water into a bowl, add the dried shiitake and leave to soak and infuse overnight in the fridge.
Strain the dashi. Discard the shiitake, or use it for Chirashi Sushi.
The dashi can be kept in the fridge for 3 days or can be frozen and used within 1 month.
