Ponzu combines dashi ingredients (such as katsuobushi and dried shiitake) and infused soy sauce with citrus fruit. It’s great with grilled meat, with sashimi or carpaccio, as a dipping sauce for Hotpot and Gyoza Dumplings, and as a salad dressing.

Ingredients

Fresh

  • 4 teaspoons freshly squeezed lemon juice
  • 140 ml ( fl oz) freshly squeezed

Method

Mix the soy sauce, mirin and sake in a saucepan and heat until just below boiling point. Add the shiitake and katsuobushi and transfer it to the fridge to rest overnight.

Strain the sauce mixture into a bowl and discard the katsuobushi. Keep the shiitake to re-use in another recipe.

Strain the lemon and orange juices and add to the soy mixture.
