This cheese sauce is instantly created with cream and can also be used to top chicken breasts, baked potatoes or even to make a quick lobster thermidor. Just replace the Worcester sauce with lemon juice, spoon over the cooked lobster and brown under the grill.

Ingredients

  • 4-6 thick slices of French bread
  • melted butter, for brushing
  • 1 teaspoon English mustard

Method

  • Preheat the grill. Brush both sides of each bread slice with butter and toast the top and bottom to a golden brown under the grill.
  • In a large bowl, stir the mustard and Worcester sauce into the cream. Extra mustard can be added for a stronger taste. Loosely fold in the cheese and prawns, then spoon the mixture on to the toasts.
