These subtly flavoured nuts are easy to make and are finished off in the oven. The exotic taste of curry adds a new twist, which makes them quite irresistible.

Ingredients

  • 2 tablespoons groundnut (peanut) oil
  • 2 tablespoonscoarsely chopped garlic

Method

  1. Preheat the oven to 140°C, 275°F, gas mark 1.
  2. Heat a wok until it is hot, then add the oil. When the oil is moderately hot, add the garlic and cashew nuts, and stir-fry for 30 seconds or until lightly brown. Now add the soy sauce and stir-fry over mode
