Curried Cashew Nuts

These subtly flavoured nuts are easy to make and are finished off in the oven. The exotic taste of curry adds a new twist, which makes them quite irresistible.


  • 2 tablespoons groundnut (peanut) oil
  • 2 tablespoonscoarsely chopped garlic
  • 225g (8 oz)raw cashew nuts
  • 1 tablespoon light soy sauce
  • 1 tablespoon Madras curry powder
  • salt and freshly ground black pepper, to taste
  • ½ teaspoon five-spice powder


  1. Preheat the oven to 140°C, 275°F, gas mark 1.
  2. Heat a wok until it is hot, then add the oil. When the oil is moderately hot, add the garlic and cashew nuts, and stir-fry for 30 seconds or until lightly brown. Now add the soy sauce and stir-fry over moderate heat for about 2 Minutes or the liquid has evaporated.
  3. Then add the curry powder, salt, pepper and five-spice powder and mix well so that the nuts are thoroughly coated with the spices. Remove the nuts with a slotted spoon and spread on a baking tray.
  4. Cook in the oven for about 15-20 Minutes or until lightly brown. The nuts will be crisp once they begin to cool.
  5. Turn onto a platter and serve immediately.
