Spicy Prawn Soup

This is a fast version of a Thai-style soup that is easy to make and extremely tasty. Perfect for a dinner party too. If you like your food really spicy, include a teaspoon or two of chilli powder.


  • 225g (8 oz) raw unpeeled prawns, fresh or frozen
  • 1.2 litres(2 pints) home-made chicken stock or quality store-bought fresh stock
  • 1 or 2 fresh red chillies, seeded and finely shredded
  • salt and freshly ground black pepper, to taste
  • 2 tablespoons fish sauce or light soy sauce
  • 1 tablespoon lime zest
  • 2 tablespoons lime juice
  • 1-2 teaspoons chilli powder (optional)
  • handful fresh coriander sprigs


  1. If using frozen prawns, defrost thoroughly. Peel the prawns and discard the shells. Using a small sharp knife, remove the fine digestive cord. Wash the prawns in cold water, rinse well and pat dry with kitchen paper.
  2. In a wok, bring the stock to simmering point. Add the chillies, salt, pepper, fish sauce or soy sauce, lime zest and lime juice. If you like it spicy, add the chilli powder. Simmer for another 3 Minutes.
  3. Add the prawns, cover the wok and remove from the heat. Allow to stand, covered, for 10 Minutes.
  4. Finally, stir in the coriander.
  5. Ladle into a large soup tureen or individual bowls and serve immediately.
