This is a fast version of a Thai-style soup that is easy to make and extremely tasty. Perfect for a dinner party too. If you like your food really spicy, include a teaspoon or two of chilli powder.

Ingredients

  • 225g (8 oz) raw unpeeled prawns, fresh or frozen

Method

  1. If using frozen prawns, defrost thoroughly. Peel the prawns and discard the shells. Using a small sharp knife, remove the fine digestive cord. Wash the prawns in cold water, rinse well and pat dry with kitchen paper.
