Garlic Prawns

Preparation Time: 5 Minutes
Cooking Time: 6 Minutes

Prawns are perhaps one of the easiest foods to cook and, fortunately, they are also one of the most popular. Who can resist succulent, tasty prawns? Not many of us. This recipe uses olive oil, mixing Eastern and Western ingredients for a fresh taste - a technique known as fusion cooking.

  • 450g (1 lb) raw unpeeled prawns, fresh or frozen
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons finely sliced garlic
  • 125g (4 oz) sliced onions
  • salt and freshly ground black pepper, to taste
  • 2 teaspoons sugar

  1. If using frozen prawns, defrost thoroughly. Peel the prawns and discard the shells. Using a small sharp knife, remove the fine digestive cord. Wash them, drain and pat dry with kitchen paper.
  2. Heat a wok over high heat until it is hot. Add the oil, and when it is hot and slightly smoking, add the garlic and onions. Stir-fry for 2 Minutes or until golden brown.
  3. Then add the prawns, salt, pepper and sugar, and stir-fry for about 4 Minutes or until the prawns are pink.
  4. Turn onto a warm platter and serve at once.
