Stir-Fried Prawns with Chives

Stir-frying prawns is perhaps one of the simplest ways to make a quick but elegant meal. Prawns are everyone’s favourite. For convenience, this recipe uses ordinary chives, rather than the more usual traditional Chinese chives.


  • 450g (1 lb) raw unpeeled prawns, fresh or frozen
  • 2 tablespoonsgroundnut (peanut) oil
  • 225g (8 oz) thickly sliced onions
  • 1 teaspoon salt
  • freshly ground white pepper, to taste
  • 2 teaspoons sesame oil
  • 6 tablespoonschives, cut in 2.5cm (1 in) segments


  • 1 teaspoon sesame oil
  • salt and freshly ground black pepper, to taste


  1. If using frozen prawns, defrost thoroughly. Peel the prawns, discarding the shells. Using a small, sharp knife, remove the fine digestive cord. Wash them, drain and pat dry with kitchen paper.
  2. In a medium-sized bowl, combine the marinade ingredients. Add the prawns, mix well and marinate for 15 Minutes in the refrigerator. Drain, discarding the marinade. P
  3. Heat a wok over high heat until it is hot and then add the oil. When the oil is very hot and slightly smoking, add the onions and stir-fry for 3-4 Minutes or until golden brown.
  4. Add the prawns, together with the salt and pepper. Stir-fry for 4 Minutes or until the prawns turn pink.
  5. Stir in the sesame oil, give the mixture a couple of good stirs and continue to stir-fry for another 3 Minutes.
  6. Finally add the chives and continue to stir-fry for 1 further minute or until the chives have wilted.
  7. Turn onto a warm platter and serve at once.

P Can be prepared ahead: cover the prawns and refrigerate for up to 2 hours.
