Stir-frying prawns is perhaps one of the simplest ways to make a quick but elegant meal. Prawns are everyone’s favourite. For convenience, this recipe uses ordinary chives, rather than the more usual traditional Chinese chives.

Ingredients

  • 450g (1 lb) raw unpeeled prawns, fresh or frozen

Method

  1. If using frozen prawns, defrost thoroughly. Peel the prawns, discarding the shells. Using a small, sharp knife, remove the fine digestive cord. Wash them, drain and pat dry with kitchen paper.
  2. In a medium-sized bowl, combine the marinade ingredients. Add the prawns, mix well and marinate for 15 Minutes in the refrigerator. Drain, discarding the marinade.
