Pineapple Pork

Stir-frying is such a versatile and innovative way to cook. You can put together almost any combination of foods in the wok. Here pork is paired with sharp pineapple to give an almost sweet-and-sour taste to this easy-to-make dish.


  • 450g (1 lb) pork fillet
  • 1Β½ tablespoons groundnut (peanut) oil
  • 3 tablespoons coarsely chopped garlic
  • 225g (8 oz) fresh or tinned pineapple, chopped
  • 2 tablespoons finely chopped fresh coriander
  • 1 tablespoon dark soy sauce
  • 2 teaspoons sugar


  • 2 teaspoons light soy sauce
  • 2 teaspoons Shaoxing rice wine or dry
  • sherry
  • 1 teaspoon sesame oil
  • 2 teaspoons cornflour


  • handful fresh coriander sprigs


  1. Cut the pork into thin strips about 5 cm(2 in) long. In a medium-sized bowl, combine the marinade ingredients. Add the pork, mix well and leave to marinate at room temperature while you prepare the other ingredients. Drain, discarding the marinade.
  2. Heat a wok over high heat until it is hot. Add the oil, and when it is very hot and slightly smoking, add the garlic and stir-fry for 15 seconds or until golden brown.
  3. Add the pork and stir-fry for 3 Minutes.
  4. Finally, add the pineapple, coriander, soy sauce and sugar, and continue to stir-fry for 3 Minutes.
  5. Turn onto a warm platter, garnish with the coriander and serve at once.
