Cucumbers are among the few vegetables to be found in virtually every fridge. Not only do they make an easy salad, but they are also a refreshing cooked vegetable when combined with meat. This fast dish requires little work and the cucumbers are half ‘cooked’ by the salt.

Ingredients

  • 675g ( lb) cucumbers (about )
  • 2 teaspoons

Method

  1. Peel the cucumbers, slice them in half lengthways and, using a teaspoon, remove the seeds. Then cut into 2.5cm (1 in) cubes. Sprinkle with the salt and mix well. Turn into a colander and stand for 20 Minutes to drain. This gets rid of any excess liquid. Rinse in cold water and blot dry with kitchen paper.
