Stir-Fried Pork with Cashew Nuts

This is one of the easiest and tastiest ways to rustle up a quick meal. Pork cooks fast in the wok and the nuts add an irresistible and satisfying crunch.


  • 450g (1 lb) lean pork fillet
  • 2 tablespoons groundnut (peanut) oil
  • 50g (2 oz) raw cashew nuts
  • salt and freshly ground black pepper, to taste
  • 1 teaspoon sugar


  • 1 tablespoon Shaoxing rice wine or dry sherry
  • 1 tablespoon light soy sauce
  • 2 teaspoons sesame oil
  • freshly ground black pepper, to taste
  • 2 teaspoons cornflour


  1. Cut the pork into thin slices 5 x 1cm (2 x in). In a medium-sized bowl, combine the marinade ingredients. Add the pork, mix well and marinate for 15 Minutes at room temperature. Drain, discarding the marinade. P
  2. Heat a wok on high heat until it is hot. Add the oil, and when it is very hot and slightly smoking, add the pork slices and brown undisturbed for 30 seconds. Then stir-fry until cooked (about 2 Minutes). Make sure that there is no pink left. Remove with a slotted spoon and leave to drain in a colander.
  3. Reheat the wok over a high heat and when it is hot, add the cashew nuts, salt, pepper and sugar. Reduce the heat to low and stir-fry for 2 Minutes.
  4. Return the pork to the wok and stir-fry for 2 Minutes or until heated through.
  5. Turn onto a warm platter and serve at once.

P Can be prepared ahead: cover and refrigerate the pork for up to 2 hours.
