Stir-Fried Spinach with Ginger

Nothing could be quicker, simpler or tastier than this exciting combination of spinach and ginger. The secret is to stir-fry the ginger until it is brown and slightly crispy. The result is a vegetarian delight that is also a delectable accompaniment to any meat dish.


  • 750g ( lb) fresh spinach
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon groundnut (peanut) oil
  • 3 tablespoons finely chopped fresh ginger salt, to taste
  • 1 teaspoon sugar
  • freshly ground black pepper, to taste


  1. Wash the spinach thoroughly in at least two changes of cold water. Remove all the stems and discard, retaining just the leaves.
  2. Heat a wok over high heat until it is hot. Add the oils, and when they are very hot and slightly smoking, add the ginger and salt, and stir-fry for 10 seconds or until brown and crispy.
  3. Then add the spinach and stir-fry for about 2 Minutes so that it is thoroughly coated with the oil, ginger and salt.
  4. When the spinach has wilted to about one-third of its original size, add the sugar and pepper, and continue to stir-fry for another 4 Minutes.
  5. Transfer the spinach to a colander to drain off any excess liquid.
  6. Turn onto a warm platter and serve at once.
