Nothing could be quicker, simpler or tastier than this exciting combination of spinach and ginger. The secret is to stir-fry the ginger until it is brown and slightly crispy. The result is a vegetarian delight that is also a delectable accompaniment to any meat dish.

Ingredients

  • 750g ( lb) fresh spinach
  • 1 tablespoon extra-virgin olive oil

Method

  1. Wash the spinach thoroughly in at least two changes of cold water. Remove all the stems and discard, retaining just the leaves.
  2. Heat a wok over high heat until it is hot. Add the oils, and when they are very hot and slightly smoking, add the ginger and salt, and stir-fry for 10 seconds or until brown and crispy.
