Savoury Garlic Noodles

These delicious noodles can either make a fast meal by themselves or a satisfying side dish. They are easy to make and even better to eat. The noodles can be cooked in advance and will keep for up to 24 hours, covered, in a refrigerator. To make the dish completely vegetarian, use vegetarian oyster sauce.


  • 225g (8 oz) dried or fresh egg noodles
  • 4 teaspoons sesame oil
  • 1½ tablespoons groundnut (peanut) oil
  • 5 tablespoons coarsely chopped garlic
  • 1 tablespoon light soy sauce
  • 3 tablespoonsoyster sauce or vegetarian oyster sauce
  • 3 tablespoons home-made chicken or vegetarian stock or quality store-bought fresh stock
  • freshly ground black pepper, to taste
  • 3 tablespoons finely chopped spring onions


  1. Cook the noodles for 3-5 Minutes in a large pan of boiling water. Immerse in cold water for 1 minute or until cool and drain thoroughly. Toss with half the sesame oil and set aside.
  2. Heat a wok over high heat until it is hot, then add the groundnut oil. When it is hot, add the garlic and stir-fry for 30 seconds or until golden brown.
  3. Add the cooked noodles and stir-fry briskly for 3 Minutes, mixing well.
  4. Finally, add the soy sauce, oyster or vegetarian oyster sauce, stock, pepper, spring onions and the remaining sesame oil, mixing well.
  5. Turn onto a warm platter and serve at once.
