Pork and Oyster Sauce Noodles

This is one of the quickest and easiest noodle dishes I know. Be sure to get the best oyster sauce you can find and the recipe will literally cook itself.


  • 225g (8 oz) flat dried rice noodles
  • 2 teaspoons sesame oil
  • 1 tablespoon light soy sauce
  • 1 tablespoon groundnut (peanut) oil
  • 450g (1 lb) minced pork
  • 5 tablespoons oyster sauce
  • 3 tablespoons home-made chicken stock or quality store-bought fresh stock
  • 2 teaspoons sugar
  • 1 tablespoon finely chopped fresh ginger
  • 6 tablespoons finely chopped spring onions


  1. Soak the rice noodles in a large bowl of hot water for 25 Minutes. When soft, drain well in a colander, discarding the water. Toss with the sesame oil and soy sauce, and set aside.
  2. Heat a wok over high heat until it is hot, then add the groundnut oil. When it is hot and slightly smoking, add the pork and stir-fry for 2 Minutes, breaking up any clumps of meat.
  3. Add the oyster sauce, stock and sugar, and stir-fry for 3 Minutes.
  4. Add the ginger, spring onions and the noodles, and stir-fry briskly for 4 Minutes. Make sure the pork is thoroughly cooked and that there is no pink.
  5. Turn onto a warm platter and serve at once.
