Cooking carrots brings out all their inherent sweetness and their vibrant color livens up any dish.
Add the oil to a medium skillet and place over medium heat.
Add the carrots and salt. Stir-fry the carrots for 2 minutes.
Serve immediately or store in an airtight container in the refrigerator. This keeps for 2 days.
