Ingredients: 200 g (7 oz) unsalted butter, softened; 50 g (1¾ oz) icing (confectioners’) sugar; finely grated zest and juice of ½ lemon; 75 g (2¾ oz) caster (superfine) sugar; 125 g (4½ oz/1 cup) icing (confectioners’) sugar; 150 g (5½ oz) unsalted butter, softened; 1 teaspoon baking powder; 190 g (6½ oz) self-raising flour; 5 g (¼ oz) matcha green tea powder; finely grated zest of 1 lemon; 25 g (1 oz) matcha green tea powder; fresh raspberries to garnish; 100 g (3½ oz) raspberry jam; 30 ml (1 fl oz) full-cream (whole) milk; 200 g (7 oz) caster (superfine) sugar; 4 eggs; 1 vanilla bean, seeds scraped
